Wine pairing notes

Triarii is an example of why and how contemporary Italian wines are perfect companions to the dishes of the new generation of Chinese chef. This Greco di Tufo has a great elegant personality, it’s mineral and with a very pleasant acidity that enriches the texture and flavour of the silver cod. The wine cleans the mouth by combining its flavour characteristics to the dish vegetables and their seasoning.
