YI-STYLE ROAST PORK

Ingredients

- 500g pork belly
- 30g pickled cabbage
- 5g salt
- Leek, as required
- Ginger, as required

Method

1.Trim the pork belly into an even square.

2.Cook the pork belly in boiling water with some leek and ginger.
3.Wrap in tin foil and cook in a low oven for 8 hours.
4.Unwrap the pork, increase the oven temperature, and cook until the pork belly is crispy.
5.Arrange the pickled cabbage on a serving platter. Cube the pork belly into cubes and serve on top of the cabbage.
