BEEF ROLLS WITH STEAMED SEA URCHIN

Ingredients

100g sirloin steak (Australian)

50g sea urchin
15g egg white
25g beef stock
Vegetable oil
20g maize kernels
10g diced carrots
5g diced asparagus
Salt
Pepper

Method

1. Steam egg white and stock for 7 minutes


2. Add sea urchins and keep steaming until well cooked

3. Blanch the vegetables

4. Cut the beef in thin slices

5. Quickly sauté the beef in a pan with a bit of vegetable oil

6. Season with salt and pepper

7. Place a piece of steamed sea urchin on each slice of beef and roll it

8. Serve with a decoration made with the vegetables
