DURIAN WITH CARAMELISED SUGAR

Ingredients

- 300g durian, deseeded and skin removed
- Vegetable oil, as required
- 100g white sugar
- 500g flour

Method

1.Roll the durian into rough balls. Coat with the flour and deep fry until it turns golden brown and crispy.


2.Heat a little bit of oil in a wok and then add the sugar until caramelised and forming threads. Add the durian and quickly toss to combine then serve.
