Chef Jackie Fong is the executive chef at Celestial Court (St. Regis Beijing). With an extensive experience and in-depth understanding of culinary culture, Chef Fong is good at combining the essence of Chinese cuisine with local ingredients. In 2009 he was granted the special Golden Award among the “Greatest Chefs” for his admirable culinary career of 40 years of culinary in which he has travelled all over Philippine and Vietnam and worked at several well-known hotels’ Chinese restaurants. Chef Fong has always been showing full respect to local flavours while maintaining traditional cooking methods to set his own style. Before joining the St. Regis Beijing, he has worked in many hotels within Marriott Group, and has been in contact with many different cultures, constantly trying to catch the newest cooking trends.
